The Roosters answered back through Carter Mareko before Jayden Rawson charged through off a perfect Charlie Jones delivery to give St George a half-time edge.
The visitors went back-to-back on the other side of the half through Fynn Wilson and Corbin Devaney to earn their first lead of the contest.
Phoenix Johns nabbed a superb, 90-metre intercept try 46 minutes in to breathe some life back into the Dragons' chances, but it proved in vain with Devaney finding a second to seal it for the Roosters.

Steelers
Venue: Raiders Belconnen, Canberra
The Steelers took down a strong Raiders 26-24 outfit in the nation's capital to continue their unbeaten start to 2025.
Big man Mason Andrews crossed for the Steelers just two minutes in off a well-rehearsed crash play.
Quick tries to Geordan Amaiu and Kye Anderson earnt the Raiders their first lead of the contest moments later before Illawarra hit back via a sleek shift finished off by Jaxon Ballinger.
A quick play-the-ball paved the way for Logan Fenwick to add another for the Steelers before Nioka Aldridge answered for Canberra to cut the Steelers' edge back to two heading into the break.
Canberra hit the lead on the other side of half-time through Jezaiah Charles before the Steelers put together a match-defining spurt.
A pristine Jett Brookfield cut-out sent captain Cooper Morrison into space down the left edge with Ballinger finishing things off for his second.
The following set, a piece of Ollie Burton brilliance wrestled the lead back the way of Illawarra.
The talented fullback gathered in a loose pass from his own side of halfway, burst through the line courtesy of a deadly left-foot step, and left his opposite in the dust with another hot step to reach out and score.
Kuluni Vaipuna crossed for Canberra in the final stages, but the conversion attempt was waved away as the Steelers held on for a nice win.

They found a fourth on the other side of the break through Jayda Durham before Malu-Sianne Auda and Ana Ahmat snagged back-to-back tries to bring the hosts back within 10.

A Charlie Heidke double was not enough to drag Illawarra past the Raiders in Canberra with Shaun Timmins' men falling 34-20.
The hosts got off to a strong start with Luke Cannon and Mahonri Tiotala bagging early tries.
Heidke came up with an answer for the Steelers off a deft Kade Reed grubber before Saifiti Junior Saifiti dove over in the corner for the side's second.
The Raiders found tries on either side of the break through Jesse Milin and Cooper Johnston before Reed and Heidke combined for another with the former sending the latter into space before backing up on the inside to finish things off.
A savvy Reed cut-out sent Heidke into space again just moments later with the talented centre this time outrunning the cover to notch his second and bring Illawarra back within two with a little over 20 to play.
It was the Raiders who owned the final quarter however with Alex Hardy and Cannon both nabbing late tries to seal the victory.
